Gourmet Indulgence – Curtain Raiser – A Dinner with Abhay Kewadkar
Time – 7:30pm
Date – 19th September, 2013
Venue – Spaghetti Kitchen, High Street Phoenix, Lower Parle

The largest and the longest wine and bespoke menu pairing event so far in the country Four Seasons Wines today flagged off the Four Seasons ‘Gourmet Indulgence’, a first-of-its-kind pan India epicurean food & wine journey. The Four Seasons gourmet journey covers 7 cities at 90 signature restaurants spread over 45 days.

The event starts from September 20th and is on till October 5th 2013 in Mumbai, Pune and Goa. This unique food and wine festival also took place in other cities such as Bangalore and Delhi, making it the largest and longest celebration of food and wine pairing in the country.

My Starter : Pollo Polpettine.

Anushree’s Main Course : Pollo Repieno.

My Main Course : Italian Vegetable Pie.

Dessert : Flourless Chocolate Cake.

I was seated next to Mr. Abhay Kewadkar, So I asked a few FAQ’s :

Types of Still Wine :
White Wine : Wine that’s made from light-skinned grapes or from dark-skinned grapes whose juice doesn’t contain any extracted color from the skin.
Red Wine : Wine having a red color derived from skins of dark-colored grapes.
Rose Wine : Pinkish wine from red grapes whose skins were in contact with the grape juice for a very short time
Wine Tasting Steps :
COLOUR: It should be clear and not at all cloudy. Also remember that aging causes change in wine color.
SWIRL: Swirling of the wine is essential because it helps in releasing the flavors and aromas of the wine. Swirl the wine by either using the palm of your hand as the base support or a table top.
SMELL: After the swirling smell the aromas released by the wine. White wine smells fruitier and while red wine smells more berry like.
SIP: Wine is not a ‘Hurry-Drink’. Take a sip of the wine and roll it around in your mouth so that you can taste and enjoy all the flavors that the wine has to offer. And then gulp!
How to Hold a Wineglass :
You should always hold the glass by the stem, no matter what the shape or size of the glass or the type of wine. The most common mistake you see in restaurants and at dinner parties is people holding a wineglass by the bowl. When you do this with a Champagne flute or a wineglass, your body heat warms the drink inside. Of course, white wine and Champagne both taste best when they’re chilled.  So pinch the stem between your index finger and your thumb. If holding the glass by the stem feels unwieldy, check the portion: A wineglass should be only a quarter to a third full.
Abhay Kewadkar, Chief Wine Maker and Director of Four Seasons Wines said, “Four Seasons wines have always been synonymous with the concept of food and wine pairing, associating with international events such as the Le Concours de l’Inde des Jeunes Chefs Rôtisseurs 2013 by Chaine des Rotisseurs, Asian Junior Chefs Challenge by MasterChefs of Great Britain, bespoke events by Michelin Star Chef from France. Our consumers expect innovation in complementing and contrasting flavors of food with our award winning range of wines.
